The Second Day of Christmas

Today (December 26) begins the week of Kwanzaa, for those who celebrate.

On the SECOND DAY OF CHRISTMAS I gave to myself
2 eggs from organic, cage-free, pasture-raised chickens
And a plan to eliminate my hyperinsulinemia
with an avocado tree.

For lacto-ovo vegetarian (and even Adventist non-vegetarian) diabetics (or anyone, for that matter), eggs are just about the most perfect food there is! (If you’re a dietary vegan, stick to avocados. Refer back to the FIRST DAY OF CHRISTMAS.)
