To make a low carb cooked cranberry sauce, or low carb stove-top cranberry sauce, one only needs fresh or frozen cranberries, water, and a low-carb sugar alternative like erythritol. Just boil the ingredients together and the natural pectin in the cranberries will thicken it up.

Cranberry Whip
Cranberry whip is an easy, tasty last-minute holiday treat if you need one. You can also freeze and slice to serve, or freeze individual servings in cupcake liners. Then transfer them to a large zipper bag, and enjoy from the freezer all winter.

  • 1 bag (12 oz) fresh cranberries
  • 1 cup chopped pecans (or other nut)
  • 1 block cream cheese (softened to room temperature)
  • 1 cup Swerve Confectioners
  • 2 cups heavy cream

Whip cream in a separate bowl. Chop cranberries in a food processor, then blend with softened cream cheese and Swerve. Fold in nuts and then whipped cream. Serve immediately, refrigerate, or freeze.
