Low-carb, high-fat, Adventist non-vegetarian (vegetarian options given). Loosely adapted from http://lowcarbyum.com/chunky-low-carb-no-bean-chili-recipe/. May be topped with shredded cheese and minced onion (not calculated in Nutrition Information below).
Ingredients:
- 1 T. coconut oil
- 1 lb. ground beef*
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 15-oz. can Eden® Organic Black Soy Beans
- 3 c. chopped fresh tomatoes (3 medium tomatoes)
- ¼ c. apple cider vinegar
- 1 T. chili powder
- 2 t. cumin
- 1 t. paprika
- ½ t. sea salt
- ½ t. black pepper
Instructions:
- Brown ground beef (or vegetarian equivalent) in a skillet with coconut oil.
- Add onion and garlic.
- Put mixture into large saucepan or crock pot.
- Add black soy beans, including the liquid.
- Add remainder of ingredients and mix well.
- Simmer on stovetop for about an hour, or in crock pot 6-8 hours (if you can wait that long!).
- If desired, top with minced raw onion and shredded cheese (not included in Nutrition Information calculation).
