Ingredients:
- 2 c. grated zucchini
- 4 fresh eggs (I have my own chickens so I know they are non-GMO and healthy)
- 1 stick of unsalted butter
- 1 small banana, mashed up
- Stevia equivalent to ½ c. sugar
- 1 t. vanilla or almond flavoring
- 1 t. apple cider vinegar
- 1½ t. baking soda
- 1 T. cinnamon
- 1 t. nutmeg
Beat all the above together well. Then add:
- 1 c. coconut flour
- ¼ c. almond flour
- ½ c. chopped pecans
Instructions:
- Preheat oven to 350° F.
- Pour into a greased (with coconut oil) loaf pan.
- Bake at 350° F. for one hour.
- Serve warm with coddled Devon cream or cream cheese.
