Ingredients:

  • 2 c. grated zucchini
  • 4 fresh eggs (I have my own chickens so I know they are non-GMO and healthy)
  • 1 stick of unsalted butter
  • 1 small banana, mashed up
  • Stevia equivalent to ½ c. sugar
  • 1 t. vanilla or almond flavoring
  • 1 t. apple cider vinegar
  • 1½ t. baking soda
  • 1 T. cinnamon
  • 1 t. nutmeg

Beat all the above together well. Then add:

  • 1 c. coconut flour
  • ¼ c. almond flour
  • ½ c. chopped pecans 

Instructions:

  1. Preheat oven to 350° F.
  2. Pour into a greased (with coconut oil) loaf pan.
  3. Bake at 350° F. for one hour.
  4. Serve warm with coddled Devon cream or cream cheese.
