I have long since lost the original recipe from the 2004 Weimar “Reversing Diabetes” seminar, but here is my own recipe using shirataki noodles. NOTE: A true Weimar recipe would not use olive oil, but I do.

Ingredients:

  • 3 T. olive oil
  • 1 medium onion, chopped
  • 4 cloves of garlic, chopped
  • 32 oz. vegetable broth
  • 3 T. tamari
  • 1 medium carrot, sliced
  • 3 bunches baby bok choy, washed, trimmed, and sliced
  • 2 pkg. Miracle Noodle shirataki angel hair*
  • 1 t. sea salt
  • ½ t. cayenne pepper

Instructions:

  1. In a large pot, sauté onions and garlic in oil.
  2. Add broth, tamari, carrot, bok choy, shirataki, and seasonings to pot with onions and garlic.
  3. Bring the pot to a boil, then cover and simmer for 15-20 minutes.
