I have long since lost the original recipe from the 2004 Weimar “Reversing Diabetes” seminar, but here is my own recipe using shirataki noodles. NOTE: A true Weimar recipe would not use olive oil, but I do.
Ingredients:
- 3 T. olive oil
- 1 medium onion, chopped
- 4 cloves of garlic, chopped
- 32 oz. vegetable broth
- 3 T. tamari
- 1 medium carrot, sliced
- 3 bunches baby bok choy, washed, trimmed, and sliced
- 2 pkg. Miracle Noodle shirataki angel hair*
- 1 t. sea salt
- ½ t. cayenne pepper
Instructions:
- In a large pot, sauté onions and garlic in oil.
- Add broth, tamari, carrot, bok choy, shirataki, and seasonings to pot with onions and garlic.
- Bring the pot to a boil, then cover and simmer for 15-20 minutes.
