Easy Low-Carb Almond Meal Polenta or Grits
Before I began eating low-carb, I used to love polenta AND grits! So I was especially delighted today to find this recipe. Note: I would definitely use almond MEAL, and NOT almond flour (they are NOT the same!). If you are vegan or lactose-intolerant, you could probably use a non-dairy Parmesan cheese, although it would be higher in carbs, so calculate carefully if you are tracking carbs. Enjoy!
