However, as a person with diabetes or pre-diabetes, you already know to eliminate added sugar, as well as natural sugar found in foods such as fruit, honey, maple syrup, and milk. If you have read our general dietary guidelines, you also know that starches are just as bad as sugar and, in many ways, are worse because the high blood glucose can last longer.
All starches (carbohydrates) convert to sugar (glucose) in the digestive process. Starches include grains, even whole grains like brown rice, legumes, and starchy vegetables like potatoes, sweet potatoes, and winter squash. Beetroot and carrots are also starchy vegetables, but can be used sparingly as garnishes for salads.
What About Sugar Substitutes?
Many believe that sugar substitutes should be avoided because it is the sweet taste that causes insulin to rise. However, sugar substitutes can be used as a transition from sugar to no sugar.
